Please clarify if the scale always displays a non-negative number. For example, if the scale displays 3, and we exchange the coins in the two trays, will the scale display -3, or will it continue to display 3?

"In each weighing the scale shows the difference of the weights placed in each pan. "
Does this mean we can put one coin on my scale and nothing to the other? This will give us the weight in only one go.
